- The Vineyard – The Sauvignon Blanc block is located on a very steep south facing slope where the vines are dry grown without irrigation. The vines are hand pruned and bud numbers are controlled to create a vine balance. Extensive canopy management is carried to control high vigour in wetter seasons and all vineyard activities are carried out by hand with little use of machinery, ensuring both vine and fruit are carefully managed.
- The Winemaking – The fruit was gently handpicked in small open crates in order to preserve the integrity of the fruit and ensure all fruit was both ripe and unspoiled. These were then whole bunch pressed and fermented in stainless steel tanks. 2016 was an excellent year - producing fruit high in sugar which was chilled to less than 10 degree Celsius then de-stemmed and pressed to tank and fermented over a period of 2 1/2 weeks. The wine was then stirred weekly as it matured over a period of 3 months before filtering and bottling.
